With temperatures rising, instead of indulging in scoops of heavy ice cream, prepare these yoghurt pops to satisfy your sweet tooth without going overboard on the calories. Adding fresh seasonal berries or fruit to your favourite yoghurt is a quick and easy way to customise a healthy popsicle.

Strawberry yoghurt popsicles are your healthy frozen treat solution! Besides standing next to an open refrigerator on a hot day, these cold refreshing popsicles are the best way to beat the summer heat.

Vanilla Greek Yogurt = good. Strawberries = good. A frozen yoghurt popsicle of sorts = goooooooooood. A creamy yoghurt popsicle filled with sweet strawberries and raspberries. MUST MAKE NOW.

The first ingredient is, you guessed it, strawberries. Yes, actual fresh fruit! None of that artificially flavoured fruit stuff. You’re going to blend the strawberries up into a juicy puree consistency. Just like this:

Ingredients:

  • 100g sugar
  • 100g water
  • 1 tsp vanilla extract
  • 500g strawberries/raspberries
  • Juice and zest of 1 lemon

Method:

  1. In a saucepan, add the sugar, water and vanilla, allow to dissolve and let the mixture boil.
  2. In a blender, add the fruit with the sugar syrup, lemon juice and zest and blend into a smooth puree.
  3. Store in a glass jar and pop in the fridge. Store in the refrigerator for four days, or freeze them as ice cubes.

You can also buy the puree if you want to save yourself the hassle, available from all supermarkets.

Yoghurt Pops Ingredients:

  • 360g greek yoghurt
  • 177g double cream
  • 1 tsp vanilla extract
  • 200ml raspberry/strawberry puree (as above)

Method:

  1. Mix all the ingredients in a blender until smooth, roughly 30 seconds.
  2. Divide the mixture into ice cream moulds. Pour a little at first, insert the stick and fill to the top.
  3. Pop in the freezer to set. They will pop right out of the mould as its made from silicone.

Try one for yourself and then share the rest, only if you dare though! You can make all types of variations with different flavours; the recipe still stays the same. If you are using passion fruit puree, only 118g of double cream is required.

Tips:

  • Layer the yoghurt pops with granola, and add diced pieces of strawberries, raspberries, kiwis, oranges, whatever your heart desires. Can also add chocolate chips, shaved chocolate.
