The notes of rose and strawberry are matched perfectly together. As you take a bite, you will be taken into a cloud filled with strawberries and bursting through will be hints of rose.

This tart is 100% vegan and made with refined sugar. Bring a little love in the air this valentine, luckily for us, it's on a Friday, meaning more time to prep this for yourself, your loved ones or your girls!

Makes a small 5-inch tart

Ingredients for the crust:

  • 2 tsp rosewater (add more if needed, be sure to taste the mixture first)
  • 25g fresh or frozen strawberries
  • 113ml unsweetened plant-based milk (can be soy/almond/cashew)
  • 56ml full fat coconut milk
  • 1/2 tsp agar agar powder

Method:

  1. Preheat the oven to 160ºC fan, gas mark 3.
  2. Add all the crust ingredients into a medium bowl and work it with your hands. The mixture will be thick, this is the consistency you want. Grease the tart tin with vegan margarine/butter. Firmly press the mixture into the bottom and up the sides. You don't need to be perfect here, just make sure it's all even.
  3. Bake in the oven for 15 minutes, or until you think its browned enough. Place the tin on a wire rack and allow to fully cool at room temperature, in the tin.
  4. Add the plant-based milk to a saucepan along with the rose water, over medium heat and bring it to the boil. Remove from the heat, allow infusion for 10 minutes. Strain the liquid through a fine sieve and allow to cool at room temperature. 
  5. In a blender, add the rose-infused milk and strawberries, blend till its very smooth. 
  6. Add the coconut milk and strawberry mixture into a saucepan, place on the stove on low heat. When the mixture becomes warm, add the agar-agar, stirring constantly. Cook until the agar-agar has completely dissolved (approximately 3 minutes). Whisk in the maple syrup. Let the mixture simmer for about 1 minute. 
  7. Turn off the heat, strain the mixture through a fine sieve and allow it to cool before pouring into the tart. Once poured, chill in the fridge for approximately 5 hours/or overnight.
