Mother's day is coming up, and we all love to spoil our mummy's, as no matter what age you are, they always do everything for you. So why not treat them, and it's not just on mother's day should you shower them with love and treats, it should be every day! This easy three ingredients white chocolate mousse will have you swooning over, and you would have won a piece of their heart every single time with it.

We all know white chocolate can be very sweet, so if you find it's sickly sweet, you can go ahead and add a little bit of salt, to balance out the sweetness. You will want to use good quality white chocolate (not the cooking kind, we mean the eating kind)

The recipe is egg-free too, meaning those with dietary requirements can enjoy this. It is so easy to make, requires a little bit of heating, some chilling and using them muscles to whip up the cream.

Ingredients:
  • 900ml whipping cream (around 35% fat)
  • 300g white chocolate, chopped
  • 1 tsp vanilla extract
  • Pinch of salt (optional)
Method:
  1. Heat the cream in a medium saucepan over medium heat. Heat until bubbles begin to form around the edges. Do not step away from the stove, as you do not want to burn the mixture. Add in the chocolate, and stir with a balloon whisk, until all the chocolate is melted and you are left with a smooth mixture.
  2. Stir in the vanilla. Pour into a large bowl and allow to cool at room temperature. (If you are in a rush, you can have a bowl full of ice and cold water and place the bowl directly on top, stirring the mixture to speed up cooling) 
  3. Refrigerate until its very cold, preferably overnight. If you are in a rush, you can pop the bowl in the freezer, be sure to check up on it as you don't want the mixture to freeze up.
  4. Whip up the chocolate cream with an electric hand mixer, or use a balloon whisk to gain some muscles. Whip until stiff peaks form—pipe or spoon into bowls. If you think the mixture is still soft, pop it back in the fridge until it firms up. Whip it up again and add to your serving bowls. 
  5. Serve immediately, or store in the fridge for three days. 

Optional: You can garnish the mousse with your favourite fruit and nuts. Or you can add sprinkles.
