We have several recipes on fudge, but there are so many variations, and although you may be able to adapt it, it just wouldn't turn out right as specific ingredients are needed as well as measurements. 

If you love Reese's buttercups, then trust us, this one is for you. It's super smooth and extra delicious. If you are the crunchy kind peanut butter, then you can add that in too. 

It takes a few minutes to make, chill in the fridge and enjoy. Get your kids involved. Spruce it up with even more peanuts on top. 

Ingredients:

  • 397g condensed milk
  • 150g smooth or crunchy peanut butter
  • 1 tsp vanilla extract
  • 50g butter
  • 200g icing sugar - sieved

Equipment:

  • 7-inch square tin lined with parchment paper

Method:

  1. Put all the ingredients except for the icing sugar in a heavy-based saucepan. Melt the ingredients over low heat. Be sure to stir constantly until smooth and silky.
  2. Turn up the heat and let the mixture boil for 2 minutes, stirring at all times to prevent it from sticking. The mixture will thicken and start to come away from the side of the pan.
  3. Remove from the heat and add in the icing sugar, mix it thoroughly, you can use an electric whisk if you want. Pour the mixture into the lined tin, smooth the top using the back of a spoon.
  4. If you wanted to, you could add additional peanuts. Or dark melted chocolate on top. 
  5. Leave to cool at room temperature. Once its cold, transfer to the refrigerator and chill overnight. 
  6. The next day; remove from the tin, using a sharp, hot knife, cut the fudge into bite-size pieces.

Tip:

  • A hot knife allows you to get precise even squares. Be sure to wipe the blade with a kitchen towel before slicing.
