These rose cheesecakes taste like Falooda. Falooda is a cold dessert, with origins in the Indian subcontinent. Traditionally it is made from mixing rose syrup, vermicelli, sweet basil seeds and pieces of jelly with milk, often served with ice cream. The vermicelli used for preparing falooda is made from wheat, arrowroot, cornstarch, or sago. 

This recipe is very straightforward and delicious. You can use shop-bought chocolate canape baskets. The cream cheese tastes exactly like a falooda, its so delicious and will keep you going back for more. The base is a ginger crumb, and what's so good about it, there is no mess to clean up. The chocolate is edible, and the contents piped are all edible. Pop into your mouth and enjoy the simpler pleasures!

Method:

  1. Crush the ginger biscuits; I used a blender. Melt a little bit of butter in the microwave and incorporate it in the crumbled biscuits.
  2. Whisk the cream cheese and half of the double cream together. The mixture should be stable to decorate, not too runny. If it needs to be sweet, add a little icing sugar, but be sure to taste!
  3. Add the food colouring using a toothpick, add the rose essence and whisk till the gel paste is all incorporated. Be sure to taste, it shouldn't be too strong, but still, rosy enough.
  4. Spoon the biscuit base into the chocolate cups. Transfer cream cheese to a piping bag, fitted with a 1M Drop star nozzle. Create a swirl or Mr whippy on top of the biscuit crumb. If you do not have a decorating nozzle, cut the end of the piping bag and just pipe.
  5. Dust the edible glitter on top, and chill in the fridge to set. Also, sprinkle some leftover crumbs on top (without the butter). Remove when ready to eat.
